Vegan Waffles

Crispy Exterior and Fluffy Interior

Ingredients
2 cups Flour
¼ cup Sugar
1 tablespoon Baking Powder
¼ tsp Salt
1 tsp Apple cider vinegar
1 ¼ cup Unsweetened Vegan Milk
2 Tbsp Canola Oil
1 tsp Vanilla Extract
Procedures
Plug in and preheat a waffle iron to your desired temperature (I used high heat to get a crispy exterior).
In a Large bowl, combine flour, sugar, salt, and baking powder and whisk until completely incorporated. In a separate smaller bowl, add the soy milk, apple cider vinegar, canola oil, and vanilla extract and whisk to combine.
Pour the soy milk mixture into the flour mixture and mix until just combined. If the batter is too stiff, add one tablespoon of soy milk at a time to achieve a scoop-able batter.
Grease the waffle iron with neutral oil like canola oil. Scoop ¾ cup of the batter and pour into the center of the waffle iron. Cook the waffle for about 8 minutes or until the waffle is golden brown and not sticking to waffle iron. Remove the waffle and repeat until all the waffle batter is used. This recipe should make about three large waffles. Enjoy the waffles warm with vegan butter, syrup, or fresh fruit.
