Soft Cakey Cookies with Sweet and Festive Frosting

Happy Halloween! For todays post, I decide to recreate those soft frosted cookies usually sold in the stores around the holidays. This recipe is fun and easy to make and yields delicious, pillowy cookies that will satisfy any sweet tooth. Frosting and decorating the cookies is a fun activity for the whole family (or friends). The cookies can be decorated with any color or type of sprinkles making them perfect for any occasion. Ingredients
Cookies
1/2 cup unsalted butter, softened (Miyoko’s Vegan Butter)
3/4 cups sugar
1/3 cup sour cream (Tofutti Vegan Sour Cream)
1 teaspoon vanilla extract
1 ¾ cups all purpose flour
1 ½ tablespoons cornstarch
½ teaspoon baking powder
½ teaspoon baking soda
¼ tsp cream of tartar
⅛ teaspoon salt
Frosting
4 cup powdered sugar
2 Tbsp vegetable shortening
3 Tbsp unsalted butter (Miyoko's Vegan butter)
3 Tbsp alternative milk
1 tsp vanilla extract
Procedures

In a medium sized bowl, sift in the corn starch, cream of tartar, flour, salt, baking powder, and baking soda. Whisk the dry ingredients together until well combined and set aside. In a large bowl, add the butter, sour cream, sugar and vanilla extract. Whisk together until everything is creamed together.
Add the dry ingredients to the wet and fold together until completely combined. Place the dough into an airtight container and place in the fridge to chill for at least an hour or up to 12 hours.
Once the dough is finished chilling, preheat the oven to 375 degrees Fahrenheit. Line the baking sheets with parchment paper and set aside. Remove the dough from the fridge. Using a cookie scoop or a tablespoon, scoop two tablespoon worth of dough and form into a ball. Place the dough balls onto the parchment paper lined baking sheet about 2 inches apart.

Using the palm of your hand, press the dough balls down lightly to form disks. Place in the oven and bake for 13-15 minutes. Once the time has elapsed and the edges are slightly golden, remove the cookies from the oven.
Place them on a cooling rack to completely cool. While the cookies are cooling, make the frosting.

Frosting
In the bowl of a stand mixer or a large bowl, sift the flour. Add the butter, shortening, vanilla and salt. Mix until the frosting starts to come together. Add the soy milk 1 tablespoon at a time to get a texture that is smooth, but not too loose. Add food coloring if you desire and decorate the cookies with the frosting and sprinkles. Let the frosting dry a bit before serving or placing into an airtight container to enjoy later.
