Vegan Lime Sugar Cookies With Lime Royal Icing

Sweet and Tart Lime Sugar Cookies Glazed with Bright Lime Royal Icing

Ingredients
Cookies
2 and 1/4 cups all-purpose flour
1/2 teaspoon baking powder
3/4 cup vegan butter, room temperature (Country Crock Vegan Butter Sticks)
3/4 cup granulated sugar
3 tablespoons full fat coconut milk
zest of one lime
Royal Icing
4 Tablespoons aquafaba
1 lb powdered sugar
Juice from half a lime
Zest from one lime
Procedures
Start by making the dough for the cookies. In a medium sized bowl, sift the flour and the baking powder together and whisk together until well combined.
In a separate medium sized bowl, add the butter and cream until light and fluffy. Add the sugar and cream together. Add the lime zest and coconut milk to the butter and sugar mixture and whisk until well combined.
Add half of the flour and baking powder mixture to the butter mixture and mix well until well combined. Add the second half of the flour mixture and mix until everything is just incorporated.
On a clean and lightly floured surface, dump the cookie dough out. Using your hands, form the dough into a ball. Lightly flour a rolling pin and roll out the dough to a ¼ inch thickness. Using a cookie cutter, cut your desired cookie shapes. Place the cut out cookies on a parchment paper lined baking pan about an 1 inch spaced apart from each other. Once all the cookies are cut out, place the baking sheet into the fridge to chill the cookies for at least 1 hour.
Once the cookies are chilled, preheat the oven to 350 degrees Fahrenheit. Place the cookies in the oven once the oven is fully preheated and bake the oven for 15 to 17 minutes or until the edges are lightly golden brown. Remove the cookies from the oven and place on a cooling rack to cool completely.
While the cookies are cooling, make the Royal Icing. Sift the powdered sugar into a medium sized bowl and set aside. In a stand mixer, add the aquafaba and lime juice. Turn on the mixer and whisk the aquafaba and lime mixture until it's light and foamy. Add a third of the powdered sugar into the aquafaba mixture and mix until well incorporated. Add the second third of powdered sugar and mix until well incorporated. Finally, add the last third of powdered sugar and the lime zest and whisk until well combined.
Once the cookies are completely cooled, decorate them with the Royal Icing. Let the Royal Icing dry before serving. Best enjoyed within the next couple days. Keep in an airtight container to preserve.
