Vegan Lemon Soft Cookies

Simply, Sweet and tangy~ This recipe is super easy and fun to make with results of super soft and tender lemon cookies. This recipe only uses the natural flavoring from lemon juice and lemon zest to give a bright and fresh lemon flavor true to itself. There are two options to make these cookies; one with vegan butter and the other with coconut oil. I highly recommend the vegan butter because makes super soft and fluffy cookies. The coconut oil on the other hand, makes chewy cookies with a more dense and gooey crumb. I hope you try this recipe out and let me know if you do!
Ingredients
10 tbsp Softened Butter (Can substitute coconut oil with varied results)
1 cup White Sugar
Zest of 2 Lemons
4 tbsp Lemon Juice
2 ¼ cup All Purpose Flour
1 tsp Baking Powder
1/2 tsp Salt
Procedures
In a large mixing bowl add the butter and sugar and cream together with a whisk or spatula. Add the lemon juice and zest to the bowl and mix together. In a separate bowl, add the flour, baking powder and salt. Whisk together then add to the bowl with wet ingredients.
The dough will be very moist, to make the batter easier to work with, cover the bowl with plastic wrap and let solidify for about 30 minutes in the refrigerator. While the batter is firming, preheat oven to 350.
Line a baking sheet with parchment paper. Once the batter has firmed a little portion out 2 tablespoon sized balls and place onto the baking sheet about 1 inch apart.
Once all the batter is used and all the balls are formed, bake the cookies for 10 to 13 minutes or until the bottom of the cookies are golden brown.
Let the cookies cool completely and enjoy!
