Vegan Brownies

Fudgy Gooey Chocolate Brownies



Ingredients

½ cup soy milk

1 cup white sugar

½ cup brown sugar

1cup canola oil (vegetable works too)

1 teaspoons vanilla extract

¾ cups cocoa powder

2 cup all purpose white flour

1 tsp baking powder

1/2 teaspoon salt

1 cup Chocolate chips, nuts, coconut, ect. (optional)


Procedures

Preheat the oven to 350 degrees F.

Grease and line a 8x8 inch pan with neutral flavored oil (vegetable, canola, ect) and parchment paper. Set the pan aside and prepare the batter.


In a medium size bowl, sift in the flour, cocoa powder, baking powder and salt. Add the chocolate chips or your choice of toppings and whisk the mixture together until well combined. Set aside and prepare the wet ingredients.


In a large bowl, combine the soy milk, white sugar, brown sugar, oil and vanilla. Whisk together until well combined. Pour half of the flour and cocoa mixture into the wet ingredients and gently fold or whisk together until just combined. Add the other half of the dry ingredients and fold or gently whisk until just combined. The batter will seem too oily, but it's okay. The oil will provide good moisture to the center of the brownie and a flakey top.


Pour the batter into the grease and parchment paper lined baking pan. Using the spatula or the palm of your hand press the batter down evenly in the pan. Place the brownies into the oven and bake for 30-35 minutes. Use a toothpick to check for the doneness of the brownie. The toothpick should come out clean or with minimal crumbs, not wet or covered in batter.


When the brownies are finished baking, remove them from the oven and let cool on a cooling rack for at least 30 minutes. When the brownies are completely cooled, remove them from the pan and cut into pieces. Serve the brownies slightly warm with ice cream or your choice of condiment. Keep in an airtight container and best enjoyed within the next couple days.
