Vegan Breakfast Burritos

Fast, easy, and perfect for breakfast or brunch. This burrito recipe is far from authentic cuisine, but it does hit the spot if you are carving an eggy American style breakfast burritos. Feel free to change the toppings and adjust the spices to your preference.
Ingredients:
1 tbsp olive oil
½ medium white onion small diced
3 cloves garlic minced
½ jalapeno seeded and de-ribboned minced
½ bell pepper small diced
1 block extra firm tofu, drained and pressed dry
1 tsp cumin
¼ tsp chipotle powder
½ tsp dry oregano
3 tbsp nutritional yeast
Salt and pepper to taste
Corn or flour tortillas
Avocado
Hot sauce and salsa
If you are feelin’ extra, add vegan cheese*
Procedures:
In a large saucepan, heat the olive oil, bell pepper, and onion on medium high heat and cook till the onions are translucent.
Add the garlic and jalapeno and cook till aromatic, about 30 seconds.
Lower the heat to low and crumble the tofu into the pan. Add the cumin, oregano, and nutritional yeast and cook for 10 minutes. Season to taste with salt and pepper.
While the tofu scramble is cooking, heat the tortillas over the stove or in the microwave.
Remove the tofu scramble from the heat and build your tacos with the scramble, avocado, and desired sauces and other toppings.
