Vegan Biscuits

Flakey and Tender Biscuits, Made Vegan!

This is an easy recipe for vegan biscuits go perfectly with any comfort food meal. Making biscuits can be intimidating, but after a few tries you'll learn they aren't that difficult to make. This recipe is pretty for giving and yields delicious biscuits that you can whip up in an hour. I hope you try this recipe out and let me know if you do!


Ingredients

4 ½ cups all-purpose flour (514g) plus extra for cutting biscuits

¼ teaspoon salt

2 tablespoon baking powder

2 tablespoon granulated sugar

1 cup vegan butter (225g)***

1 ½ cup unsweetened milk alternative (Almond or Soy milk are my favorites)

1 tablespoon white or apple cider vinegar


Optional (Green onion or chives)


*** For the butter you want to use vegan butter sticks, not spread! I used the Country Crock Olive Oil Butter sticks. For best results freeze the butter for 30 minutes before starting the biscuits.


Procedures

Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.


Remove the butter from the fridge and cut into cubes. Then place back into the fridge until needed.


Next, make the vegan buttermilk. In a small bowl combine the milk alternative and the vinegar and whisk together. Place the vegan buttermilk into the fridge until needed.


In a large bowl, combine the flour, salt, baking powder and sugar and whisk until well combined. If you are using green onion or chives, add them to the flour mixture and mix them in. Remove the cubed butter from the freezer and place into the flour mixture. Using a pastry cutter or two forks cut the butter into the flour until the texture resembles wet sand.


Remove the vegan buttermilk from the fridge and add it to the butter and flour mixture. Using a spatula or wooden spoon mix until a shaggy dough forms. Be careful not to over mix and just stir until the dough comes together.


Dump the dough out onto a clean and lightly floured surface. With your hands, press the dough into a ball shape. Then press the ball of dough out into a disk. Press the dough out until it has an even thickness a little under and inch. Cut the biscuits out with a biscuit cutter or with the rim of a glass. You should get about 13 biscuits.





This part is optional, but makes for golden brown tops on your biscuits. Brush the tops of the biscuits with either more vegan butter or alternative milk.


Place the biscuits into the oven and bake for 18 to 20 minutes or until the biscuits are golden brown on top.


Remove them from the oven and let cool on a cooling rack for at least ten minutes before serving. Enjoy the biscuits warm with your favorite topping, jams, vegan butters or fillings. Keep in an airtight container in the fridge to preserve and best enjoyed within a couple of days.
