Sweet Pineapple Rolls

Light and Fluffy Sweet Dinner Rolls lightly Flavored with Sweet Pineapple Juice

Ingredients 4 cups all-purpose flour 2 tablespoons sugar 2-¼ teaspoons quick-rise yeast 1 cup soy milk
¾ cup pineapple juice 2 tbsp (Miyoko's) butter, melted
½ tsp salt
Procedures
Heat the soy milk in the microwave until warm to the touch, for about 30 seconds in the microwave. Add the sugar and yeast to the soy milk and let bloom for 10 minutes to ensure the yeast is active.
Once the yeast is bloomed add the yeast mixture, melted butter, salt, pineapple juice and flour into a large bowl.
Mix until a shaggy dough forms. Knead the dough either in the bowl or on a clean and floured surface for about ten minutes or until smooth and elastic. Form the dough into a ball.
Grease a large mixing bowl with neutral oil. Place the dough ball into the bowl and cover with a damp dish towel or plastic wrap. Let the dough rise in a warm place for about an hour or until doubled in size.
Preheat the oven to 375.
Once the dough has doubled, dump the dough out onto a clean surface and gentle punch down it to release some of the gas. Cut the dough into 8 pieces and roll the eight pieces into uniform balls.
Grease a 9x9 inch baking dish or thirteen inch diameter pie platter with neutral oil. Place the eight pieces in the dish and cover again with plastic wrap or a damp towel. Let the rolls rise for another ten to fifteen minutes.
Once the time has elapsed, unwrap the rolls and brush the tops with more pineapple juice or melted butter. Place the rolls into the oven and bake for 20 minutes or until the tops of the rolls are golden brown.
Remove the rolls from the oven and let them cool completely on a cooling rack. Enjoy with dinner or just as a snack. Keep in a ziplock or airtight container to preserve.
