Old Fashion Gingerbread Loaf (Vegan)

Spiced Ginger Loaf Glazed Over with Vanilla Icing

Ingredients
2 ½ cup Flour
Zest of one orange
½ tsp Baking soda
2 tsp Baking powder
1 tsp Cinnamon
¼ tsp Nutmeg
¼ tsp Clovers
1 tsp Ground ginger
¼ tsp Salt
½ cup unsalted Vegan Butter (Miyoko's)
¾ cup White sugar
1 cup Molasses
1 cup hot water
Vanilla Glaze
1 Cup Powdered Sugar
1 Tablespoons soy milk
1/2 tsp vanilla extract or ½ vanilla bean
Procedures
Preheat the oven to 350 degrees Fahrenheit and grease a 9x9 inch pan with butter or neutral flavored oil. Set aside and make the batter.
In a large bowl, sift in the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, ginger, and salt. Add the orange zest and whisk together until everything is well combined.
In another large bowl add the vegan butter and sugar and whisk cream together until fluffy. Add the molasses and whisk together until well combined. Add half of the flour mixture and mix to combine. Add the half of the flour mixture and mix until just combined. Add the hot water and mix until well combined.
Pour the batter into the greased pan. Place in the oven and bake for 50 minutes. Remove the gingerbread from the oven and let cool until completely.
While the gingerbread is cooling, make the glaze. In a medium bowl whisk to combine the powdered sugar, vanilla, and soy milk.
Once the loaf is completely cooled, turn it out and ice with the glaze. Serve and enjoy. Keep refrigerated to preserve.
