Extra Crispy and Crunchy Granola with Rolled Oats, Seeds and Grains

Nothing beats a cold fresh smoothie topped with crunchy granola. What's even better than granola? Homemade granola! Making granola is super fun and easy to make. Making granola at home is a lot cheaper than store bought granola, and it also gives your the freedom to put whatever you want into it.
This recipe is very versatile and forgiving. If you don't have pumpkin seeds or chia seeds or puffed millet you can replace it with your favorite kind of nut or seed or grain you want. I decided to use canola oil and sugar just to obtain the crunchiest granola possible. You can use coconut oil and all honey or agave, but just be warned, it won't be as crunchy. Ingredients
4 cups rolled Oats
2 Tablespoons Chia seeds
1 cup Pumpkin Wax Seeds
½ tsp Cinnamon
½ tsp Salt
1 cup Puffed Millet
½ cup canola oil
¼ cup Honey (agave for vegan option)
¼ cup sugar
Procedures
Preheat the oven to 350 and line a large baking sheet with parchment paper.
In a large bowl, combine the oats, chia seeds, pumpkin seeds, cinnamon, salt, and puffed millet. Mix until everything is well combined. Next, add the honey, canola oil and sugar to the bowl and mix well until everything is evenly coated. Dump the granola out on the lined baking sheet and spread out into an even layer (if you are using smaller baking sheets, you might need to use two).
Place the baking sheet into the oven and bake the granola for 15 minutes. Remove the baking sheet from the oven and stir the granola carefully. Place the baking sheet back into the oven and bake for another 15 minutes or until golden brown. Make sure to check the oven about 10 minutes in to make sure nothing is getting too dark.
Remove the baking sheet from the oven and let the granola cool until completely cooled down. If you want to add dried fruit to the granola, do so only after the granola is completely cooled down. Serve on your favorite smoothie, ice cream or just by itself. Keep in an airtight container to preserve.
