Chocolate Shortbread Sandwich Cookies with Pumpkin Filling

Sweet Pumpkin Cream Sandwiched between two Crispy Chocolatey Shortbread Cookies

Fall is right around the corner and there is no better way to start the season than with some pumpkin spice themed pastries. These are the perfect fall treat to kick off the season right.


Ingredients

Chocolate Cookie

2 Cups dairy-free butter

2 tsp vanilla extract

2 cups caster sugar

3 ½ cups all purpose flour

½ cup Cocoa or Cacao


Pumpkin Filling

¼ cup Pumpkin

1 tsp Pumpkin Spice

1 tsp vanilla extract

4 cups Powdered sugar

1 Tbsp Butter

Splash of almond milk if needed


Instructions

In a large mixing bowl, cream together sugar, butter and vanilla extract. Sift in the flour and mix until well combined.

Wrap in plastic wrap and place in the fridge for at least 30 minutes to firm.

Preheat the oven to 320 degrees Fahrenheit.

After the 30 minutes has elapsed, remove the dough from the fridge and place it onto a clean floured surface. Roll the dough out to ½ centimeter thickness. Using a cookie cutter, cut out desired shapes. Ball the scraps up and re-roll it out to cut more cookies. This recipe makes about 24 cookies.

Place cookies on a parchment lined baking sheet and place in the oven. Bake the cookies for about 25 to 30 minutes.

Remove the cookies from the oven and place on a wire cooling rack to cool down for at least 10 minutes.

While the cookies are cooling, start to make the Pumpkin Cream Filling. In a medium mixing bowl, sift in 4 cups of powdered sugar and pumpkin spice. Add the pumpkin puree and vanilla extract then whisk until smooth. If the cream is too thick or stiff add a splash of almond milk and whisk together. Set aside until cookies are completely cooled.

When the cookies are completely cooled, it is time to assemble the cookie sandwiches. Scoop the cream into a piping bag or ziplock bag. Pipe an even layer of cream onto the center of the cookie and then place another cookie on top to create a cookie sandwich. Repeat until all the cookies are used. This recipe should make about 12 cookie sandwiches.
